Homemade Vanilla Extract

Problem: Good-quality vanilla extract is hard to find & really expensive.  And did you know that it can be labeled "pure" but can contain corn syrup, caramel, colors and stabilizers?  YUCK!   

Solution: Make your own!

Here's the How To:
1 dark screw top wine bottle
3 cups Light Rum (You can also use vodka but I like the taste of rum.  Besides rum is cheaper than water in this zip code.)
9 vanilla beans

  1. Throughly wash the wine bottle inside and out with soap and hot water.  I also like to do a final rinse with boiling water.  Let air dry completely.
  2. Spilt vanilla beans in half lengthwise and drop into the bottle.
  3. Pour in the rum.  
  4. Store in a cool place away from the sun for 6-8 weeks before using.  Give the bottle a shake every so often. 
It'll last for years.  Just keep topping it off with rum and a new vanilla bean every so often.  

Once you make your own you'll NEVER go back to store-bought vanilla extract again!  Homemade is rich and flavorful and makes a HUGE difference in taste.  You'll look for new ways to use it...smoothies, cocktails, dinner?  

This recipe makes a whole heck-of-a-lot of extract but you can fraction it and make less (about 3 beans per cup of rum).  Or better yet give some away.  It makes a quick & easy hostess gift, a nice departure from the standard bottle of wine.

Make it now and it'll be ready in time for the holidays!
